So you are visiting the new mom with lots of love, gifts, prayers, and blessings for the little one, right? And for the mom? While everyone would congratulate her and may even bring a gift for her, you can make it different by surprising her with a scrumptious treat!  After all, she is busy looking after her little one, and is hardly paying attention to cooking and eating.

Here are some delicious and simple recipes you can prepare for the special new mom:

1. Tuna Casserole

Ingredients

Short pasta (such as penne, rotini, or fusilli), ¾ package
Diced tomatoes (canned), 1 ½ cups
Frozen corn, 2 cups
Salsa (mild or hot, as the mom likes), ½ cup
Black olives (pitted and sliced), ¼ cup
Fresh cilantro (chopped), ½ cup
Solid tuna (drained) 2 cans
Tex-Mex shredded cheese blend (divided), 2 cups

Preparation Method

Set the oven to preheat at 375°F. Set salted water to boil in a large pot over high heat and cook pasta according to the package directions. When done, drain and set aside.

In a large casserole dish, combine corn, salsa, tomatoes, 1 cup cheese blend, cilantro, and olives. Add tuna and pasta and stir gently to combine. Add the remaining cheese blend on top and set to bake for 20 minutes and serve this delicious meal to the new mom.

All-purpose flour (leveled and spooned), 2 cups
Brown sugar (packed), ¼ cup
Salt, 1 tsp

Cinnamon (ground), ½ tsp
Milk, 2 cups
Vegetable oil, ¼ cup + more to grease
2 eggs

Preparation Method

Combine flour, baking powder, sugar, cinnamon, salt, and oats (1 cup) in a food processor and pulse to combine well.

In a large bowl, whisk together oil, eggs, and milk. Add the dry mixture along with the remaining 1 cup of oats in the wet mixture and whisk to form a thick batter.

Grease skillet and place over low-med heat. Drop 2-3 spoons of batter in the skillet and spread. Let it cook for 1-2 minutes before flipping on the other side. Cook for another few minutes until done. Make all the pancakes and serve with bananas, maple syrup, and powdered sugar.

Pumpkin seeds, 1 tbsp
Oats, 1 tbsp

Fresh blueberries, ¼ cup

Preparation Method

Combine pumpkin seeds, oats, almonds and honey in a bowl and set to microwave for 45-50 seconds. Remove and allow to cool.

Shallots (minced), 1 tsp
Rosemary (minced), ½ tsp
Salt, ¼ tsp

Spinach (1 bunch)
3 large oranges
½ shallots (thinly sliced)
1 large pomegranate
Rosemary leaves, 1 tbsp
Ground pepper, to taste

Preparation Method

To prepare the dressing, whisk the juice, zest, mustard, vinegar, olive oil, and buttermilk. Add rosemary, salt, and shallots. Set aside.

To prepare the salad, cut the bottom and top off the oranges. Peel off and remove the pith. Cut into thin slices. Pour ¾ of the dressing over the spinach and coat. Spread spinach on a platter. Place oranges on top. Scatter with shallots and pomegranate seeds. Pour the remaining dressing, season with salt and pepper and top with rosemary leaves. Enjoy!

Ingredients

Boneless chicken breast (with skin), 3 pieces
Montrachet cheese, 5 oz.
Basil leaves (fresh), 3 large

Preparation Method

Set the oven to preheat at 375°F.

Prepare a sheet pan and place the chicken breast over it. Using your finger, loosen the skin, leaving it attached on one edge.

Now slice the cheese and place it under the skin along with large basil leaves. Pull over the skin and cover the entire meat.

Drizzle some olive oil, rub over the chicken, and generously season with salt and black pepper. Set to bake for 30-40 minutes. When the chicken is cook thoroughly, remove from the oven and the chicken is ready to be served.

Set the oven to preheat at 350°F.

Prepare a roasting pan and arrange tortilla chips spreading them at the bottom. Top the chips with cooked chicken, salsa, beans and cover with cheese. Set to bake for 10-12 minutes until the cheese melts.

Ground beef, 1 lb
BBQ sauce, ½ cup

Preparation Method

Brown ground meat in a pot and drain. Add BBQ sauce and combine well.

Place biscuits into muffin cups and press nicely to the sides and the bottom. Spoon BBQ meat mixture in eat biscuit cup and cover with lots of cheese.

Ingredients

Long-grain rice (cooked and chilled), 4 cups
Soy sauce, 2 tsp
Chicken stock, 2 tbsp
Salt, 1 tsp
8 medium shrimp (cooked)
Sugar, ½ tsp
Chicken (chopped), ½ cup
Vegetable oil, 2 tbsp
Chicken (cooked and chopped), ½ cp
Tiny peas (frozen), ½ cup
Green onion (chopped), ¼ cup
Bean sprouts, ¾ cup

Preparation Method

Crumble the rice before stir-frying. Set aside.

In a mixing bowl, combine soy sauce, chicken stock, sugar, and salt and whisk to dissolve sugar and salt in the mixture.

Chop the cooked shrimp and set aside with chicken.

Heat a deep, large skillet over med-high flame. Add vegetable oil and coat the skillet. Add chicken and toss to combine. Add shrimp and stir. Cook everything together for about 1 minute.

Add rice next and toss to mix. Add the chicken stock mixture and stir to combine all the ingredients. Add peas next and toss again.

Toss often as you cook until the rice is tender and hot and properly seasoned for around 1-2 minutes. Add green onions and bean sprouts in the end and toss to combine. Transfer all the contents in the skillet to a serving plate and serve hot.

10. Black Bean Crunchy Tacos

Ingredients

Black beans (cooked), 2 cups
Red onion (minced), ½ cup
Fresh cilantro (minced), 2 tbsp
Paprika, 1 tsp
Ground cumin, ½ tsp
Salt, a pinch
Pepper jack cheese (grated), 1 heaping cup
8 corn tortillas
Vegetable oil, 2 tbsp

Ingredients for Topping

Sour cream
Salsa
Hot sauce
Avocado

Preparation Method

Add red onion, beans, cilantro, paprika, and cumin in a mixing bowl. Add salt and combine all the ingredients, slightly mashing them together. Set aside. Grate the Pepper Jack cheese and set it aside.

Heat 2 tbsp oil in a large, nonstick skillet over med-high heat. Placing one tortilla in the oil at a time, heat them for a few seconds. Place the bean filling on the half side of the corn tortilla and cover with cheese. Do not over fill.

With the help of a spatula, fold the other side of the tortilla to cover the filling. Press it down nicely. Cook for 2-3 minutes, browning the tortilla nicely. When done, remove from the skillet and place it on the platter. Repeat with the remaining tortillas.

Handle tortillas carefully or else the filling might spill out. Serve warm with toppings like sour cream, avocados, salsa, and hot sauce.
