Hearing the word “salad” may conjure up images from your childhood – limp lettuce with a few tomatoes, a crouton or two, and a heavy, chemical tasting dressing. Is it any wonder that many of us shunned salads for years after being presented with that for years? Salad recipes have come a long way and you don’t need to be a vegetarian to enjoy a scrumptious salad every once in awhile; and even make it  a main meal in itself. And after a holiday season where we may indulge more than usual, eating a salad with fresh ingredients a great way to cleanse out your system. Here are 7 salads so delicious, you’ll want to diet!

 

1. Pear Pecan Mache

Ingredients:

  • 2 pears cored & diced
  • 1 cup pecans coarsely chopped
  • 2 cups arugula
  • 2 cups mache
  • 1 tablespoon Dijon mustard
  • 1 tablespoon agave syrup
  • 3 tablespoons olive oil
  • salt & pepper

 

2. Garden Salad

Ingredients:

  • Romaine Lettuce
  • 1 small shredded beet
  • 1/2 shredded carrot
  • 1 small sliced avocado,
  • small hand full of pumpkin seeds
  • 1/4 cucumber sliced

Honey Mustard Dressing:

  • 1/4 cup  ground mustard
  • 2-3 tablespoons honey
  • juice of 2-3 fresh limes
  • pinch of salt

 

3. Asian Quiona Salad

Ingredients:

  • 1 cup cooked quinoa ( follow directions on package)
  • 2 cups water
  • 1/4 teaspoon salt
  • 1 cup chopped red cabbage
  • 1 cup edamame ( cooked & shelled)
  • 1 red bell pepper, chopped
  • 1/2 cup shredded carrots
  • 1 cup diced cucumber

Dressing:

  • 1/4 cup lite soy sauce or tamari sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice wine vinegar
  • 2 tablespoons chopped green onion
  • 1/4 cup chopped cilantro
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon grated ginger
  • 1/8 teaspoon red pepper flakes
  • Salt & pepper

 

 

4. Shredded Brussels Sprouts Salad

Ingredients:

  • 6 shredded Brussels sprouts 
  • small handful chopped pecans
  • small handful sunflower seeds
  • small handful chopped dried cranberries
  • 1/4-1/2 diced avocado

Dressing:

  • 2 tsp  Tamari sauce
  • 2 tablespoons flax oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoons honey
  • 1 tablespoon  stone ground mustard
  • 1/2 tsp curry powder

 

 

5.Salad Greens with Artichoke Vinaigrette

Ingredients:

  • 3 tablespoons fresh lemon juice
  • 1/3 cup extra virgin olive oil
  • salt and pepper
  • (1) twelve ounce jar artichoke hearts (packed in water or oil), drained and roughly chopped
  • (2) five ounce packages of mixed greens

 

6.Spinach & Grape Chopped Salad

Ingredients:

  • 2 tablespoons pine nuts
  • (1)  six ounce package fresh baby spinach
  • 1 cup seedless red grapes, sliced
  • 1/4 cup crumbled reduced-fat feta cheese
  • 1/4 cup light raspberry-walnut vinaigrette

 

7. Cucumber, Tomato and Feta Salad

Ingredients:

  • 2 cucumbers, peeled and sliced
  • 1 large carton pearl or cherry tomatoes
  • 1/4 cup crumbled feta cheese
  • 3-5 fresh mint leaves, chopped
  • extra virgin olive oil
  • salt & pepper
